Oh, How Pinteresting!

Happy Hump Day! Tomorrow is my Friday and I get to spend your Friday hanging out at home with my little man. It's a much needed dose of quality time and I can't wait! I've been busy with crafts and food this week, but don't think for a second that I've neglected Pinterest! Although I really had a hard time finding gems this past week. Shocking, I know.

I absolutely love this idea. I have a birthstone/diamond ring with Evan's birthstone in it that Nick bought me after Evan was born. It's just as important to me as my wedding ring because of the meaning behind it. Once we're done having kids (yes, Mom, that was plural) I think I might have to order one for each baby!  :)

I like this coaster idea. They can be purchased on Etsy, but I think that I can make them faster and cheaper! I even have some scrapbook paper in mind.

I think graham crackers are probably the best option!  :)

I have an earring obsession. Don't even worry about it.

McCutie

My mom picked Evan up from daycare today and decided to treat him to fries and nuggets at McDonalds. I guess he was pretty upset that she was cutting his dinner into pieces and wanted to feed himself. He's getting so independent!

Boston Cream Cupcakes

Boston Cream Cupcakes

These little devils are addicting and so much better than their full size version.

INGREDIENTS
For the cake:
1 Box yellow cake mix 
*Including the ingredients called for on the box

For the filling:
1 Pkg (3.4oz) instant vanilla pudding
1 1/2 Cup milk
1 1/4 Cup Cool Whip

For the frosting:
1 Stick unsalted butter
1 1/2 Cup semi-sweet chocolate chips

Makes 24 cupcakes
 Mix and bake cupcakes according to box directions.
 Let cupcakes cool completely. Then slice in half horizontally.
Now it's time to make the filling.
 Combine milk and pudding mix. I used less milk then what the package calls for because I wanted a custard consistency rather than a pudding consistency. Let sit about 5 minutes.
 Now add the Cool Whip.
 Put a dollop of filling in each cupcake. 
Once all of your cupcakes are filled, melt your chocolate. Mix pieces of butter with the chocolate chips and put in the microwave for one minute. Stir and place back in the microwave in 30 second intervals until chocolate is completely melted.
Spread over your cupcakes and store in the refrigerator. Make sure you cool them at least an hour before you eat one.... if you can wait that long!
They can get a little messy, so I might suggest eating them with a fork!

Crock Pot Buffalo Chicken

I don't know about you, but I love my crock pot! I love buffalo chicken even more! And this is a similar recipe to the Crock Pot Chicken Tacos that I showed you a couple weeks ago. There are so many things that you can do with today's recipe, so let's get to the recipe...

INGREDIENTS
6 medium chicken breasts
1 Pkg. Hidden Valley Ranch Dip Mix
1 (12oz) Bottle Frank's Buffalo Sauce

Put your chicken in a large crock pot on low. 
Plain buffalo sauce is waaaaay too hot for me, so I knew I needed some sort of coolant!
 My original plan was to use liquid ranch dressing, but I saw the mix when I was picking up the Frank's and thought it was worth a shot.
Add the dip mix to the chicken.
 Then pour the entire bottle of buffalo sauce on top.
 Leave on low for 7-8 hours. Your chicken will fall apart! Once it's completely shredded, add it back to the juices in the crock pot and leave on warm until you're ready to use it.
Watch later in the week for some ideas on what to do with your delicious buffalo chicken. In the mean time, this chicken is PERFECT for the Buffalo Chicken Dip recipe I gave you a few weeks ago.

Weekend Getaway

Happy Monday and Happy 24th Birthday to my handsome husband!!

Evan went to my mom and dad's house on Friday after work and we headed North for a little weekend getaway to celebrate Valentine's Day and Nick's birthday. We stayed at Mille Lacs Casino on Friday night and did a little gambling. Nick wasn't lucky at all, but I managed to play for about 4 hours and only lose $10. And I am completely embarrassed about what I'm about to tell you, but I spent about 5 minutes playing max bet while I thought I was just repeating my last spin. So if you think about it, losing $10 is a pretty good deal. Lesson learned: Don't gamble while exhausted!

We got up early on Saturday morning to participate in a fishing contest out of Garrison on Mille Lacs Lake. It was a great contest, but we didn't catch a damn thing. It was worth a shot and pretty fun to spend some quality time with my hubby. We left the contest a little early because I was nervous about the 3,200 contestants trying to leave the lake at the same time. YIKES! We brought our ice house up and parked it on a nearby lake. We were so tired from being outside all day that we just watched movies and slept until Sunday morning. 

You'll notice that I don't take many pictures when Evan's not around!!
This is how I participate in fishing contests...
AND the big drama of the day.... a snowmobile driving a little too close to the ice heaves started to go under. I should note that this was before the contest even started!!
Here are some pictures of Evan's weekend. It looks like he had more fun than we did!
We missed him like crazy and were so excited to get home to him. 
What did we do with all of our time before Evan was around?!
