Mint Pie

Ahhhh... I finally put all that "Pinning" to good use. You can find my pin here.

I made this pie for St. Patrick's Day and it was a hit!! Very refreshing... especially with the summer-like weather we've been having. Normally we're shoveling snow this time of year in good ole' Minnesota. We're grilling instead!

You'll need:
1 cup semi-sweet mini chocolate chips
     *Plus a handful to sprinkle on top
1 (12oz) can evaporated milk
1 tablespoon butter
1 (prepared) 9 inch chocolate pie crust
1 (3.4oz) package instant vanilla pudding
1/3 cup water
1 teaspoon mint extract
3-4 drops green food coloring
1 (8oz) container Cool Whip, thawed

Microwave chocolate chips and 1/3 cup evaporated milk for 45 seconds. Stir, add butter and microwave for 30 seconds. Stir and microwave another 15 seconds. Pour into pre-made chocolate crust. **DIY Oreo crust would be great too. Find a recipe here.**
Refrigerate for 20 minutes.
Beat remaining evaporated milk, pudding mix, water, mint extract and green coloring. 
Let sit for a couple of minutes to thicken up. 
Gently stir in 2 cups of Cool Whip and another drop of green coloring.  
 Spoon over chocolate layer. 
Refrigerate at least 2 hours. Sprinkle with more chocolate chips. We decided that it would be really good if we put it in the freezer for an hour or two before eating. Just like mint chip ice cream!
**The original recipe says to spoon more Cool Whip on top. I didn't like how that looked, so I just swirled it into the filling and threw some chocolate chips on top.
